1 pound fresh or frozen cranberries
1 cup orange juice
½ cup sugar
1-inch fresh ginger, minced
2 mandarin (Cuties) peeled and segmented
In a large saucepan, combine all ingredients. Simmer over low heat until the berries burst and the sauce is jammy, about 20 minutes. Transfer the sauce to a heatproof bowl, let cool, then refrigerate until chilled.
*You can double this and use the 2nd half for Cranberry Muffins the next morning.
